NIGERIAN FFRIED RICE

 THIS IS HOW I COOK NIGERIAN FRIED RICE 

This is a simple, affordable and easy-to-cook Nigerian fried rice recipe, cooked with simple ingredients that are easy to find anywhere in markets or shops.



In Nigeria, Fried Rice is the meal for great events like weddings, Festivals, Christmas celebrations, housewarmings, New Car Washing, Child Naming Ceremonies, Child Christening/dedications, and even Funeral Commemorations. It is much loved by Most Nigerians.

FRIED RICE INNOVATIONS OVER TIME

Back in the days, not many women knew how to cook fried rice. All we did was cook our
Rice and Nigerian tomato stew” or “Jollof rice” at home, and eat out whenever we craved fried rice. In food outlets, fried rice is the most expensive of all rice meals on the Menu. Well, this is because I have never bought sushi.


Fried rice is loved by many. Children grin all through the cooking and never leave the kitchen anytime a mother announces that lunch is fried rice. With all the colorful vegetables in there, I think that fried rice is the most healthy of all rice meals.

 

DIFFERENT METHODS OF COOKING NIGERIAN FRIED RICE

There are other “methods of Cooking Fried Rice.” There is the
method where all the vegetables are added to the pot of rice and cooked before frying. There is also a method whereby the rice and vegetables are fried together while mixing.

There is another method I call lazy man fried rice, that’s the method below. Here the vegetables are stir fried and added to already cooked rice without frying again.

One thing is common with all these methods of cooking fried rice; The taste and aroma is the same. The methods of “cooking fried rice” may vary, but the taste remains that unique Nigerian fried rice taste.

INGREDIENTS FOR THIS NIGERIAN FRIED RICE SAUCE:

This quantity for a large family of 10.


1. 1 small cabbage
2. 4 green peppers
3. 1 large red bell pepper (Optional)

4. 3 cups diced carrots
5. 1 can sweet corn ( Optional cuz I sometimes prefer my fried rice without sweet corn)
6. 1 cup green peas
7. 1 medium sized red onion
8. Red Kidney Beans (Very very Optional)
9. 2 cups boiled and diced gizzards or cow liver
10. 3 Seasoning cubes or to your taste
11. 3 cups vegetable oil to stir fry. (I used soya oil) You can add more if needed.
12. 1 tablespoon curry powder. (You can add more)
13. Half a tablespoon turmeric. (You can add more if you want)
14. Salt to taste

INGREDIENTS FOR BOILING THIS CURRIED RICE:

 

5 cups rice
3 Teaspoons curry powder
1 teaspoon turmeric or enough to change the color of the rice to your desired taste.
Chicken stock just enough to cover the rice, you can add more if pot dries up too quickly.
water to wash rice before cooking.
2 seasoning cubes or to your taste
Salt to taste.

COOKING PROCEDURE FOR BOILING THIS FRIED RICE BEFORE MIXING WITH STIR FRIED VEGETABLES:

Here is our fried rice cooking steps

Boil chicken with onion, seasoning cube and some water till done.
Use the chicken stock from the chicken, curry and turmeric to boil the rice on the stove while the chicken is being coated and fried by the side.
Chop and dice your vegetables and stir fry in oil with seasoning cubes. (Sometimes I stir fry with more oil when I need the extra ‘sauce oil’ for another dish).
Mix the Stir fried vegetables with the cooked rice in batches and serve with coated chicken or beef. OR if you do not want this lazy man method, you can fry the cooked rice in batches with the vegetables before serving.

This was on my girls’ Visiting Day at School.

The young ladies asked that we come with soft but crunchy fried rice. What? soft and crunchy together? How is that?

Thank God, I just came up with, OK, soft rice mixed with all the crunchies like much cabbage, carrots and sweet corn. That was how I cooked the rice very soft, and made sure that cabbage was much.

What was the score from the students? a whopping 110%.

INGREDIENTS FOR COATING THE STEAMED CHICKEN:

Bread crumbs OR All Purpose Flour
4 Eggs or more
Oil for deep frying

1. salted and boiled chicken is dipped in vegetable oil before rubbing in baking flour
